Our friends Juno Gin have a copper still called Lila. So, for this Belgian Wit, we used the botanical infused water from Lila in our mash water. We also added chamomile, coriander seeds, hand-zested oranges and juniper berries to the boil. Then, for good measure, a lashing of Juno's extra fine gin during fermentation! Balance with the subtle spice from the Belgian yeast, the result is surprisingly delicate and refreshing and perfect for summer... autumn... winter... and oh yeah spring!
